Valletta dressed up to celebrate the 50th anniversary of AX — and we were there with full Iberian firepower: live-carved jamón, giant wheels of cheese, pan con tomate, grissini and a bar that never stopped. Here’s our recap (with photos) of a night that had everything: sea views, music and a true Spanish-style feast.

Live-Carved Jamón: The Night’s Magnet

The moment everyone gathered around for: knife, jamonero and paper-thin slices falling like silk. No conversation near the station ended without a “one more, please.”

Cheese — Big, Bold and Shareable

We placed whole wheels as edible centrepieces: aged cheeses to break and share, with grapes, nuts and rustic breads. Visually striking, abundant and perfect for the event’s rhythm.

A Mediterranean-Minded Setup

Right on the waterfront, we built a long bar with natural materials (wood, plants, warm lights) that breathed the Mediterranean and echoed the harbour skyline. The result: a lively, photogenic space made for a thousand toasts.

The most honest metric: people came by “just to say hi”… and left with another plate.
