The tradition of tapas: much more than food (and yes, also more than Instagram)

Tapas are not a fad. Nor are they just ‘cute little dishes to upload to stories’. They are culture, they are soul, they are the most delicious way to socialise in Spain. At Iber&Co we don’t serve tapas, we serve memories. We tell you all about it, without frills and with hunger.

🇪🇸 What are tapas and why are they in the Spanish DNA?

Tapear is more than eating: it’s meeting up with colleagues without a plan, it’s ordering a wine or beer and having it come with a surprise, it’s turning the simple into a ritual. Tapas were born as a literal tapa (a piece of bread or ham on top of the glass to keep flies out), but they stayed for good.

Tapear properly: it’s not a buffet, it’s art (and attitude)

Forget those places where tapas come frozen and soulless. At Iber&Co we do it like at home: freshly fried calamari, croquettes that crunch and weep bechamel inside, salad that has been rested (as it should be), and ham that is cut with a knife. Because good tapas are made with a spoon, with bread and with pause.

🍷 Pairing is not posturing

A tapa of spicy chorizo without its red wine is like a guitar without strings. For each tapa we suggest the wine that goes best with it, because yes, we are rebels but not fools: experience matters.

This is how you eat tapas at Iber&Co: without rushing, without posturing, with flavour

Here you don’t just come to eat, you come to experience Spain. Our tavern in Valletta is a little piece of Andalusian home, where tapas are not served, they are counted. And yes, you can also order more bread, we won’t judge you.

Experience tapas as it should be experienced

From our cod bombs to the peppers stuffed with morriña: everything is made with love and cheek. We are not a restaurant, we are a tavern with character. And you can taste it in every mouthful.

What our customers are saying (and not only on Google)

‘The croquettes made me cry. I almost called my grandmother.’ – Real, emotional, hungry custome

3 facts that will make you a fan of tapas (if you are not already one)

  • King Alfonso X made it compulsory to serve tapas with wine. Wise king, indeed.
  • The word ‘tapa’ comes from the verb «tapear», yes, literally.
  • In Andalusia it is almost a religion. And in Iber&Co too.

Conclusion: less stories, more tapas

Tapas are not explained, they are lived. At Iber&Co we serve them with our hearts (and with a good splash of extra virgin olive oil). Come and have tapas like at home… or better. Because here, like at home, nowhere else.
